Often the bugs get to the boletes before we do but this day the timing was perfect. Just wait until you see the photo where McDowell cut it in half. Balfour and McDowell had those faces you ave when you cut open an avocado and it&#8217;s perfectly ripe. You know what we&#8217;re talking about!</p>

<p><em>Boletus mirabilis,</em> commonly known as the admirable bolete, the bragger&#8217;s bolete, and the velvet top, is an edible species of fungus in the Boletaceae mushroom family. The fruit body has several characteristics with which it may be identified: a dark reddish-brown cap; yellow to greenish-yellow pores on the undersurface of the cap; and a reddish-brown stem with long narrow reticulations. <em>Boletus mirabilis</em> is found in coniferous forests along the Pacific Coast of North America, and in Asia.</p>

										<content:encoded><![CDATA[<p>We all know that what we see above the ground is simply one part of the mushroom right? It&#8217;s the fruiting body and contains the spores. The largest part of the mushroom is actually the mycelium which is usually unseen because it&#8217;s underground. It&#8217;s the part that is with us year round and the part that creates and sends out the fruiting bodies. And just for reference the plural of mycelium is mycelia. People sometimes use those words interchangeably.</p>
<p>This amazing full monty boletus mirabilis gives us a glimpse of how that works by showing the mycelium. So cool!! It&#8217;s not often one gets the chance to see the mycelium out of it&#8217;s growing substrate &#8211; be it the soil or a tree. We feel so lucky. Take a look yourself and you can see the full mushroom of this brown velvet beauty.</p>

				<div class="et_pb_text_inner"><p>We received these images from Chef Luca Molteni of <a href="https://www.facebook.com/The-Barn-Chefs-185735681521119/timeline/" target="_blank" rel="noopener noreferrer">The Barn Chefs</a> in Ontario. Luca is from Northern Italy and was not sure if these mushrooms were Porcini as he calls them, King Boletes as we call them and <em>Boletus edulis</em> as the Latins call them. These boletus were found in mixed maple, popular and pine bush in Apsley, between Toronto and Ottawa.</p>
<p>Meronwood policy (laid out by our legal advisors) states we cannot identify mushrooms without seeing them so we are unable to give an opinion. But what do you think?</p>
<p>Once thing we can say is that these are gorgeous. Look at those thick robust stalks, love those.</p>

We&#8217;ve said it before and… McDowell just adores <em>Boletus everythingus</em>. And what&#8217;s not to love about these beauties!</p>

A meal in itself. McDowell&#8217;s mouth is watering already.</p>
<p>Rule of thumb regarding <em>Boletus</em>: if it doesn&#8217;t bruise blue after cutting, the sponge is not red and it tastes good, then hey, you may have yourself a delicious bolete. Always check with an expert if you have any doubt. Better to regret the perfect <em>Boletus edulis</em> that you picked as a young forager and then didn&#8217;t eat, than to eat something that you shouldn&#8217;t. Yes McDowell still has nightmares about that one.</p>

				<div class="et_pb_text_inner"><p>Need we say it again, McDowell loves <em>Boletus mirabilis</em>. This one was found in Horton, Ontario and was pretty beat up on top but the cool thing was the veil. McDowell had never seen the veil of her favourite bolete before.</p>

<p>These gorgeous boletes were found on the inlet side of Tofino, BC Canada.</p>

<p><em>Boletus mirabilis,</em> commonly known as the admirable bolete, the bragger&#8217;s bolete, and the velvet top, is an edible species of fungus in the Boletaceae mushroom family. The fruit body has several characteristics with which it may be identified: a dark reddish-brown cap; yellow to greenish-yellow pores on the undersurface of the cap; and a reddish-brown stem with long narrow reticulations. <em>Boletus mirabilis</em> is found in coniferous forests along the Pacific Coast of North America, and in Asia.</p>
